- 4 oz. mushrooms (quartered)
- 2 tsp. dried thyme (or thyme and rosemary)
- 3 cups stock (preferably mushroom stock or beef flavored stock)
- 8 oz. beer (choice Guinness or other stout)
- 1/2 tsp. salt (depends on salt content of the stock)
- 1/2 tsp. black pepper
- 1 Tbsp. soy sauce (tamari for gluten-free)
