FFfffabulous! Saw a cooking show where they were making gnocchi, jumped on Yummly and found this Vegan GF version. One hour later my wife and I were eating! Fabulous doughy texture. Used a sturdy plastic bag with the corner cut off to squeeze out the circles, and cut them off w a knife into the boiling water kind of like they’d been doing on TV. So no pretty fork marks but it seemed way quicker and easier. Added them to a simple red sauce. Making these again for sure!

**UPDATE** Worked much better the second time around, so delicious and a new family favorite. The kids love these even more than regular potato gnocchi. —-
These were really good, but my dough was too soft no matter how much flour I added. They were still a hit with my family

I should have adjusted the arrowroot because I used Italian pasta flour instead of oat flour. I put in a pinch of curry powder and served with garlic olive oil, balsamic vinegar and basil pesto sauce. My husband doesn’t like carrots but he thought it was surprisingly good!
