- 1/4 tsp. ground nutmeg
- 1/2 cup coconut oil (melted, plus extra for greasing muffin tin if not using liners)
- 1 tsp. vanilla
- 1/2 cup unsweetened applesauce (plain)
- 1/4 cup non dairy milk (room temperature)
- 1/2 cup coconut sugar
- 1 apple (peeled, chopped into small cubes)
- 1/2 cup shredded coconut
- 1/2 cup raisins
- 3/4 cup carrots (grated)
- 1/2 cup chopped walnuts (optional)
