- 1 cup chopped onion (red or sweet)
- 2 cups cremini mushrooms (or chopped Baby Bella)
- 2 cloves garlic (minced)
- 1 Tbsp. balsamic vinegar
- 5 cups baby spinach leaves (loosely packed)
- Sea salt and ground pepper (Sea salt and)
- 1 cup cooked quinoa (I cooked it in my rice cooker- here's how)
- 1 cup gluten free bread (toasted, or waffle crumbs)
- 2 Tbsp. ketchup (Annie's Organic)
- 2 Tbsp. molasses
- 1 Tbsp. olive oil (good)
- 1 Tbsp. Italian herbs (dried, Mix- basil, thyme, oregano, parsley, marjoram)
- 1 tsp. rosemary (fresh minced)
- 3 1/2 scallions (spring onions sliced thin, white to light green section)
- 1 sweet potato (baked, peeled, diced, take it out before it's cooked too much, not too soft)
- 1/4 cup fruit (no-sugar apricot, spread)
- 1 Tbsp. balsamic vinegar
- 1 Tbsp. maple syrup
- canela (A sprinkle of, and cumin)
- chili flakes (Hot red, to taste)
