- 1 Tbsp. fresh rosemary (remove the needles from the stem)
- 1/2 tsp. sugar
- 1/2 tsp. salt
- 1 tsp. almond extract (pure)
- 1/2 cup vegan butter (cold, cut into pieces, Earth Balance Soy Free is our favorite)
- 5 Tbsp. ice water
- 1/2 cup raw almonds (soak in water for 30 minutes)
- 1/4 cup sugar
- 1 large egg (1 1/2 teaspoons of Ener-G egg replacer and 2 tablespoons of warm water)
- 4 Tbsp. vegan butter (room temperature)
- 2 tsp. all purpose flour
- 1 tsp. pure vanilla extract
- 1/8 tsp. salt
- 1/2 lb. figs (ripe, approximately 8 - stemmed and thinly sliced)
- 1 Tbsp. fresh lemon juice
- 1 Tbsp. melted butter
