- 300 grams tofu (firm, cotton, pressed*)
- 3 Tbsp. soy sauce (or tamari for the GF version)
- 1 sheet roasted seaweed (toasted seaweed)
- 1/2 cup corn flour
- 120 mL aquafaba
- all-purpose flour (/ rice flour for GF version, for aquafaba version only)
- 100 grams panko breadcrumbs (or GF breadcrumbs if required)
- 1/4 tsp. salt
- oil (for shallow frying, I used rice bran oil)
- 4 Tbsp. vegan mayonnaise
- 1 gherkin pickles (small, very finely diced)
- 1 shallots (small, very finely diced or grated)
- 1 Tbsp. capers (very finely diced)
- 2 tsp. mustard (I used wholegrain)
- lemon (a squeeze of)
- salt
- pepper
- 2 bread rolls
- lettuce leaves (assorted)
- pickled onion (quick-, optional)
