  • 1 sheet roasted seaweed (toasted seaweed)
  • 1/2 cup corn flour
  • 120 milliliters aquafaba
  • all-purpose flour (/ rice flour for GF version, for aquafaba version only)
  • 100 grams panko breadcrumbs (or GF breadcrumbs if required)
  • 1/4 teaspoon salt
  • oil (for shallow frying, I used rice bran oil)
  • 4 tablespoons vegan mayonnaise
  • 1 gherkin pickles (small, very finely diced)
  • 1 shallots (small, very finely diced or grated)
  • 1 tablespoon capers (very finely diced)
  • 2 teaspoons mustard (I used wholegrain)
