- 1 waxy potato (large, peeled and cut into ½ inch cubes, if you are using red or yellow you can leave the skin on)

- fresh ground pepper
- 1 handful parsley
- 4 sprigs thyme
- 1 bay leaf
- 1 cup garbanzo bean flour (aka Chickpea flour)
- 1/2 cup cornmeal
- 2 tsp. baking powder
- 1/2 tsp. salt
- 3 Tbsp. vegan butter
- 2/3 cup non dairy milk (unflavored, unsweetened)
- 2 Tbsp. minced fresh parsley
