- 2 cups red cabbage (shredded)
- 2 cups broccoli slaw (or another shredded/grated vegetable)
- 2 cups sliced cucumbers (thinly)
- 1/2 cup pickled radishes (quick, below)
- 1/2 cup sauce (almond miso, below)
- onion tops (Chopped green, for serving)
- 1 cup radishes (very thinly sliced)
- 1/2 cup boiling water
- 1/2 cup white vinegar
- 1 Tbsp. cane sugar
- 1 tsp. kosher salt
- 2 Tbsp. white miso (or miso of choice)
- 2 Tbsp. almond butter (substitute sunflower seed butter)
- 2 Tbsp. rice vinegar
- 1 Tbsp. tamari
- 2 tsp. maple syrup (optional)
- 1/2 tsp. ground ginger (or 2 teaspoons fresh ginger, grated on a microplane)
- 1/4 tsp. garlic powder (or 1 small clove garlic, minced or grated on a microplane)
- 3 Tbsp. warm water
- 1 dash crushed red pepper flakes (to taste)
