- 1 1/2 cups macadamia nuts (soaked in water 4 hours or longer)
- 1/2 cup water
- 2 Tbsp. fresh lemon juice
- 2 Tbsp. olive oil
- 1 tsp. minced garlic
- 3/4 tsp. salt
- 2 Tbsp. minced fresh Italian parsley
- 1 cup fresh basil leaves (chiffonaded)
- 1 cup black olives (or coarsely chopped green)
- 1 cup raw cashews
- 1/2 cup water
- 2 Tbsp. fresh lemon juice
- 1 tsp. salt
- 1/2 tsp. rice vinegar
- 2 Tbsp. pine nuts (coarsely chopped, optional)
- 1/4 cup minced fresh Italian parsley (optional)

it was good!! just a suggestion: make double the sauce otherwise it will be a bit dry. we made two and added some vegan cheese to one. my new favorite vegan lasagne!!

Well. Dear Hubby said this was the best lasagna he has ever had and he is not vegan and a gargantuan cheese lover. There were a lot of steps to this recipe and also one of my pet peeves is that you get ready to make a recipe to eat that day and there is an over night soaking step involved which I had neglected to notice. However, I used the unsoaked macadamia nuts and proceeded as directed. Also I did not have lemon juice but used lime juice instead. You could avoid the noodle soaking step by using lasagna noodles that did not need to be precooked, which I did. I will agree with the author that this dish probably tastes better the second day. But it is very upon very impressive in the first day.j
