- 12 cups croissants (equivalent to about 12-16 croissants roughly torn. (I made mine from puffed pastry which is vegan)
- 6 Tbsp. vegan butter (divided)
- 2 Tbsp. extra virgin olive oil (1-)
- 1 cup onion (chopped)
- 4 celery stalks (chopped)
- 8 oz. mushrooms (sliced)
- 1 tsp. sea salt
- 1 Tbsp. garlic (minced)
- 2 cups kale (roughly torn)
- 2 Tbsp. fresh sage (finely chopped)
- 1 tsp. fresh thyme (chopped)
- 3 cups vegetable broth (2- , low sodium preferred)
- 3 eggs (flax, mix 3 tablespoons ground flax meal with 6 tablespoons water. Stir well & chill in fridge)
- 1 cup vegan cheese (optional)
