- 600 mL almond milk (or other thin plant based milk)
- 1 Tbsp. oil (I use refined coconut oil, plus more for frying**)
- 1 Tbsp. maple syrup (optional)
- 225 grams cashew nuts (soaked overnight or in boiling water for 30 minutes)
- 1 tsp. vanilla extract (or seeds from 1 vanilla pod**)
- 1/4 cup coconut cream (from a tin of full fat coconut milk, I used this brand)
- 4 Tbsp. maple syrup (adjust to taste)
- 3 Tbsp. lemon juice
- frozen mixed berries
- jam
- chocolate shavings (dark, optional)
