- 1 1/2 cups cashews (soaked overnight)
- 1 cup coconut cream
- 1/2 cup maple syrup
- 3 Tbsp. coconut oil (melted and cooled)
- 2 tsp. lemon zest
- 1 lemon
- 1 tsp. vanilla extract
- 1/2 tsp. salt
- 1 1/2 cups raspberries (1 cup for filling and 1/2 cup, cut in half for adding in at the end PLUS more for topping if desired)
- 1 Tbsp. corn starch
- 2 Tbsp. beet juice (optional)
- 1/2 cup dark chocolate chips (melted)
