Description
This is a delicious vegan-friendly version of the classic chocolate lava cake. You'll make a super simple nondairy chocolate ganache, freeze it in balls, and bake it into the center of a decadent chocolate cake.
Ingredients

- 3/4 cup milk (unsweetened plant)
- 1/2 Tbsp. apple cider vinegar (or white)
- 1 cup all-purpose flour
- 1 cup granulated sugar
- 1/3 cup cocoa powder
- 1/2 tsp. baking powder
- 1/4 tsp. baking soda
- 1/4 tsp. salt
- 1/4 cup coconut oil (melted)
- 1 tsp. vanilla extract
- 3/4 cup chocolate chips (vegan-friendly, or chopped chocolate)
- 2/3 cup full fat coconut milk
- confectioner’s sugar
- Fresh berries
- vanilla bean ice cream
- 1 sprig fresh mint
