- 1/2 cup cassava (sweet rice, or GF AP flour, such as Bob’s Red Mill)
- 1/2 cup almond flour (such as Bob’s Red Mill)
- 1/2 cup cocoa powder (preferably dutch-process)
- 2 Tbsp. tapioca flour
- 1/4 cup maple sugar (or coconut sugar)
- 1/4 tsp. fine sea salt
- 6 Tbsp. vegan butter (cold, such as Miyoko’s, diced into 1⁄2” cubes)
- 1 tsp. vanilla extract
- 1.5 oz. bittersweet chocolate (finely chopped)
- 1 cup raw cashews
- 8 cool water
- 3/4 cup water
- 1/2 cup raw cacao powder
- 1/2 cup maple syrup
- 2 Tbsp. ground chia (finely, or flax seed, I grind whole seeds in a coffee grinder)
- 1 tsp. vanilla extract
- 1/4 tsp. fine sea salt
- 1/2 cup coconut oil (melted, extra-virgin)
- 1 lb. figs (2 dozen medium, trimmed and sliced scant ¼-inch thick)
