- 1 1/4 cups oat flour (superfine, I used Bob's Red Mill b/c it's superfine. If it's not fine, your cupcakes will turn out more dense and not as fluffy.)
- 6 Tbsp. tapioca starch
- 2 1/2 tsp. baking powder
- 1/2 fine sea salt (scant teaspoon)
- 1/2 cup pure maple syrup (or agave)
- 1/2 cup unsweetened applesauce (room temp)
- 1/4 cup coconut butter (liquid/melted, see directions)
- 2 Tbsp. warm water
- 1/2 cup dairy-free chocolate chips (semi-sweet, I used Enjoy life)
- 2 tsp. vanilla extract
