Originally, I chose this recipe because it was the one vegan cookie recipe that fit my list of ingredients on-hand. I am SO glad that my pantry was bare! These were simply amazing. I used dark chocolate chips, because that’s all I had. No sweetness sacrificed. No love lost. I did use my digital scale, as recommended. Not sure if that had anything to do with my success. Thought I’d mention it, as it was advised by the recipe’s author.
