- 1 1/2 cups brown rice (long-grain, preferably basmati, rinsed)
- 1 Tbsp. fresh ginger (grated or minced)
- 3 cloves garlic (pressed or minced)
- 1 Tbsp. ground coriander
- 1 1/2 tsp. ground cumin
- 1/2 tsp. ground turmeric
- 1/4 tsp. ground cardamom
- 1 pinch ground cinnamon
- 1 pinch cayenne pepper (optional, if you like some heat)
- 28 oz. tomatoes (1 box ,whole, or diced tomatoes, with their liquid)
- 1 Tbsp. virgin olive oil (extra-)
- 3/4 yellow onion (large, finely chopped)
- 1/2 tsp. fine sea salt
- 15 oz. chickpeas (1 can ,rinsed and drained, or 1 ½ cups cooked chickpeas)
- 3/4 cup coconut milk (canned, or more if needed)
- 1/2 cup chopped fresh cilantro (plus more for garnish)

This is a great and easy recipe I make every few weeks. My recommendations are to double, if not, triple the seasonings if you want a more authentic Indian taste. I substitute the chickpeas for vegan chicken pieces (garden teriyaki strips are great). Season the chicken strips with either a simple blend of garlic powder, onion powder, Garam masala or you can just use the seasonings in the recipe on the chicken (still using the doubled amount for the masala itself). The rice definitely needs more water, I end up using a total of 2 1/2 cups of water.
