- 400 grams mushrooms (sliced and/or roughly chopped, or use button mushrooms and leave the smallest ones whole)
- 1 quorn (pack of, Vegan Chicken Pieces, 280g weight)
- 1 onion (medium, finely chopped)
- 2 cloves garlic (minced)
- salt
- pepper
- 1/2 tsp. paprika
- 100 mL cream (non-dairy, eg Alpro or Oatly)
- 250 mL white wine (You could substitute vegetable stock if you don’t drink alcohol.)
- dried thyme (or Fresh, – about a teaspoon)
- 1 handful spinach leaves
- 1 handful frozen peas (about a half-cup)
- 3 spring onions (chopped)
