- 1 sweet pepper (color of your choice)
- 2 cups vegetable broth
- 1 cup unsweetened coconut milk
- 1 1/2 tsp. curry powder
- 1/8 tsp. cayenne pepper
- 1 cup butternut squash (roasted and diced)
- 1 1/2 tsp. fresh lime juice
- 4 cups brown rice (steamed, 1 cup per person)
- 1/4 cup cilantro
- 2 Tbsp. green onion
- 1 1/2 Tbsp. garlic
- 1 pinch lime zest (to garnish, optional)
