- 1/2 inch ginger (cube of)
- 1 mild green chile (or hot, I use serrano)
- 3/4 cup water (use 1 cup if the tomatoes arent very juicy)
- 1 tsp. Garam Masala
- 1/2 tsp. paprika (or kashmiri chili powder)
- 1/2 tsp. cayenne
- 3/4 tsp. salt
- 1 cup soy curls (dry, not rehydrated)
- 1 cup chickpeas (cooked)
- 1/4 cup cashews (soaked, blended with ½ cup water)
- 1/2 tsp. Garam Masala (or more)
- 1/2 tsp. sugar (or more, or sweetener)
- 1 tsp. kasoori methi
- 1/4 tsp. ground mustard
- 1/2 hot green chile
- 2 Tbsp. chopped green bell pepper
- 1/2 tsp. ginger (minced or finely chopped)
- 1/4 cup cilantro (for garnish, optional)
