- 1 lb. peaches (ripe but relatively firm)
- 1/2 cup fresh blueberries
- 1/3 cup coconut sugar (or brown sugar)
- 1 tsp. ground cinnamon
- 1/4 tsp. nutmeg (I recommend freshly grated nutmeg)
- 1/2 tsp. ground ginger
- 2 pinches ground cardamom (optional)
- 10 Tbsp. country crock (Plant Butter)
- 1 1/2 cups all purpose flour
- 2/3 cup old-fashioned rolled oats
- 1 cup organic cane sugar
- 1/2 tsp. kosher salt (the range is based on saltiness of your butter; I used a heaping 1/4 teaspoon or scant 1/2 teaspoon; use less if using sea salt instead)
- 2 tsp. baking powder
- 1 1/3 cups oat milk (full-fat, I used Oatly)
- 1 1/2 tsp. pure vanilla extract
- 1/2 tsp. pure almond extract (optional)
- vanilla ice cream (For serving: vegan, optional)
