- 3/4 cup white rice (rinsed and drained, 150g)
- 1 1/2 cups water (360ml)
- 1/4 tsp. sea salt
- 1/2 Tbsp. lime juiced (1 or 15ml)
- 1/4 cup fresh cilantro (chopped, 15g)
- 4 small red potatoes
- 1/2 red onion
- 1 Tbsp. vegan butter
- 30 mL olive oil
- 1/4 tsp. sea salt (each, and black pepper)
- 1 cup black beans (cooked, if unsalted add ¼ tsp salt, 185g)
- 1/4 tsp. garlic powder (each ground cumin, and chili powder)
- 1/4 avocado (ripe)
- 1 Tbsp. lime juiced (2 or 30ml)
- 1 cup green cabbage (purple cabbage, or radish, thinly sliced, 89g)
- 1 seeds (jalapeno, removed, thinly sliced, 14g)
- sea salt
- black pepper
- 2 flour tortillas (large vegan, I used gluten-free tortillas)
- 1/2 avocado (ripe, sliced)
- 1/4 cup salsa
- hot sauce (optional)
