Description
A mixture of black beans, vegetables, and spices make these enchiladas a hearty, delicious dinner. They have no meat or dairy, but they're plenty flavorful and will be sure to fill you up!

- 2 cans red enchilada sauce (10 oz. per can, plus more for serving (optional))
- 1/2 red onion (medium)
- 1 red bell pepper (medium)
- 1 jalapeno pepper (small, optional)
- 2 garlic cloves
- 1 Tbsp. extra-virgin olive oil
- 1 can black beans (13.5 oz. per can, drained and rinsed)
- 1 can Hatch mild diced green chiles (4 oz. per can)
- 1/2 tsp. salt
- 1/4 tsp. black pepper
- 1 tsp. ground cumin
- 1 tsp. ground coriander
- 1/2 tsp. dried oregano
- 12 soft corn tortillas (6-inch diameter)
- fresh cilantro (optional, for garnish)
- hot sauce (optional, for serving)

Directions
- Preheat the oven to 350°F.
- Spoon about 1/2 cup of enchilada sauce into a 9x13-inch baking dish and spread evenly across the bottom. Set aside.
- Finely chop the red onion and bell pepper. Remove the seeds from the jalapeno and finely dice. Mince the garlic.

It was so good! the bean filling couldve been just a bit more, because i nearly ran out after barely filling them and a recipe for enchilada sauce wouldve been nice to. but it was very very good. (the cheese i added is unfortunately not vegan)

Added some cheese and only used one can of enchilada sauce. No leftovers, loved it.

I doubled the recipe and put vegan cheese for the last 7 mins. It was a hit. Definitely didn't need double sauce or oil though. I added extra Jalepeno and it gave it a little spicy kick. Really Yummy. This pic was before I added the sauce and cooked it.

My corn tortillas kept tearing so I just laid them flat. I used 2 layers of corn tortillas with the filling between. it turned out a little too spicy for me.

I replaced the bell peppers with green chilies and Rotela tomato's and used burrito size flour tortillas. The second time I made it I made it like a lasagna. I put the enchilada sauce on the bottom of the pan, then I added a layer of corn tortillas, then the bean mixture (plus I added rotisserie chicken) another layer of tortillas, sauce and cheddar cheese, bean mixture, tortillas, sauce, cheddar cheese cooked it then added the cilantro and served it with sour cream and salsa. I called it Mexican Chicken Lasagna.

Hi there. Thank you for sharing this recipe. I tried your recipe and it was devine. I made my own enchilada sauce and sprinkled some cheese on top before baking. My husband asked me to make it every alternate Friday night. My daughter who don't enjoy black beans also loved it. Going to make tonight again.

Hard to turn over the enchiladas when you place them in the cooking pan, but overall good!

Amazing and delicious! Added a bit of sauce inside and sprinkle of cheese to the top with a dollop of sour cream.

These were delicious. I added some spanish rice and cheese so not very vegan but the flavor to these were great. Even my meat lover enjoyed them.

It was a very easy and delicious recipe. I would recommend to add cheese and more spices such as garlic!

I really liked this recipe, although I swapped out black beans for chilli beans. I made it slightly too spicy and will include less spice next time, however, it was still very nice. I definitely recommend it.

Tasted great, might do flour tortillas next time just because they’re easier to roll without breaking.

Turned out really delicious, only used one jar on enchilada sauce (might make my own next time just for that extra homemade style) couldnt find diced green chillies so diced pickle sliced jalapeños (didnt add fresh jala) which made it super spicy but thats how i like my food. Thumbs up from me!!
