A mixture of black beans, vegetables, and spices make these enchiladas a hearty, delicious dinner. They have no meat or dairy, but they're plenty flavorful and will be sure to fill you up!

  • 1 red bell pepper (medium)
  • 1 jalapeno pepper (small, optional)
  • 2 garlic cloves
  • 1 tablespoon olive oil
  • 1 can black beans (13.5 oz. per can, drained and rinsed)
  • 1 can Hatch mild diced green chiles (4 oz. per can)
  • 1/2 teaspoon salt
  • 1/4 teaspoon black pepper
  • 1 teaspoon ground cumin

  • 1/2 teaspoon dried oregano

    They turned out delicious! I know this is a vegan recipe but I am not vegan so I topped mine with cheese after I put on the sauce. For those cooks who are vegan I highly recommend using a vegan friendly cheddar cheese to add to their enchiladas. Will definitely be making again!

    My first time making enchiladas was a lot easier than I had expected. The filling was delightful. Next time I’ll make my own sauce because I’m sure it would be better than canned.

    The prep time does take a bit, but is entirely worth it! SO TASTY! Make some Mexican rice to go with it and you have a delicious dinner.

    Delightful, but I added double the amount of spices than the recipe called for and I used green salsa and tomato sauce for the sauce component.

    Pretty good recipe. It is not kid friendly; used mild red and green chiles and was still spicy to taste. Next time, I will add guacamole to the side or just avocado.

    This came out great! Excluded cilantro, as I was out. Added (1 ) Large chicken breast, slightly ground in processor. Used Frozen Fajita veggie mixture and Mexican cheese blend. Doing this yielded two layers, so used more corn tortillas. Used microwaveable tortilla warmer, sure this helped with ease of rolling them without tearing. Going to try using green sauce next time. Overall family loved, will make again. Will add pictures next go round.

    Just a non-vegan or vegetarian here who loves her vegetables and sometimes isn't in the mood or doesn't have the money to have meat every day and this recipe was just what I needed. This will definitwly be going into my rotation, my very picky boyfriend loved it.

    Was very good, my family enjoyed it. i made the tortillas and added cheese to each tortilla roll. I suggest to add a lot.
