- 200Â grams tofu (firm non-GMO, cotton not silken, pressed)
- 4Â tsp. soy sauce (or tamari for GF version)
- 1Â tsp. chogochujang (Korean chilli paste this is the one I used)
- 4Â tsp. oil (I used rice bran oil)
- 100Â grams mushrooms (shiitake if you can get them)
- 100Â grams spinach
- 1Â carrots (shredded)
- 50Â grams edamame beans
- 1/2Â cup rice (cooked, I used brown)
- pickled daikon (see below)
- 1/2Â cucumber (long, finely sliced)
- 1Â spring onions (finely sliced)
- 100Â grams daikon radishes (or radishes)
- 60 mL rice vinegar (+ 60-120 ml / ¼-½ cup water)
- 2Â Tbsp. sugar (adjust to taste)
- 1Â tsp. salt (adjust to taste)
- 2Â Tbsp. chogochujang (Korean chilli paste)
- 2Â tsp. rice vinegar
- 1Â Tbsp. soy sauce (or tamari for GF version)
- 1Â Tbsp. toasted sesame oil
- 1Â Tbsp. maple syrup (or sugar dissolved in soy sauce)
- 1Â garlic cloves (small, finely grated)

If you like a little kick this is so delicious! The cool cucumber balances it beautifully I just loved everything about it, it’s a real foody’s meal
