- 1 cup Mexican beer (dark, Tecate or Modelo for example)
- 1 cup all purpose flour (or garbanzo bean or gluten-free)
- 1 Tbsp. cornstarch
- 1 tsp. baking powder
- 1/2 tsp. salt
- fresh ground black pepper
- 1 1/4 cups breadcrumbs (if you want gluten-free use Panko)
- 1/2 tsp. chili powder
- 1/4 tsp. paprika
- cayenne pepper (light sprinkling, optional)
- 1/2 tsp. salt
- fresh ground black pepper
- 3 Tbsp. chopped parsley (fresh, optional but it adds a nice brightness)
- 1 head cauliflower (cut into medium florets)
- 8 tortillas

So so so so so good. I didn’t want to buy a six pack of modelo beer for the batter, so I bought a can of bud light lime. Worked great! I did everything by the recipe and it turned out wonderful. My carnivore hubby LOVED IT. Cauliflower so crispy and tasty. Prep takes a long time so I would start early! First time at a leisurely pace for me was almost 2 hours.

This is an excellent taco recipe! I used Modelo Negro for the beer and added extra jalapeños in the slaw...yummy!
