- 5 cups water (plus more for soaking)

- 1 Tbsp. extra virgin olive oil
- 1 oz. dried porcini mushrooms
- 1 oz. chanterelle mushrooms (dried, may substitute another variety, such as oyster or lobster mushrooms)
- 3 cups boiling water
- 1/4 cup peanut oil (may substitute sesame or canola oil)
- 1/4 cup flour
- 1/2 yellow onion (medium, or 1 small yellow onion, diced)
- 1 carrot (scrubbed well and diced)
- 1 rib celery (diced)
- 1 tsp. thyme leaves (minced)
- 1 tsp. rosemary leaves (minced)
- 2 cloves garlic (minced)
- 1/2 tsp. freshly ground black pepper (or more as needed)
