- 1 1/4 cups granulated sugar (1 1/4 to 1 1/3 cups)
- 2 tsp. vanilla bean paste (10 grams, or vanilla extract)
- 2 tsp. cornstarch (2.6 grams)
- 4 tsp. water
- 1 1/2 tsp. agar agar (3 grams, powder)
- 8 oz. dark chocolate (or semi-sweet, dairy-free chocolate (between 53% and 70% cacao)
- 4 large bananas (ripe, but not mushy)
- 1 cup unsweetened coconut cream (240 grams, canned, chilled overnight)
- 1/2 cup confectioners sugar (62 grams, sifted)
- 1 tsp. coconut butter (4 grams, room temperature)
- 1 vanilla bean pod (seeds)
- 3/4 cup toasted coconut chips (56grams)
