This rating wasn’t specifically for the recipe, but actually for the custard. I made it and set it in a pie crust. Surprisingly not coconut-y, and seems like this would be a good base filling for any vegan custard; just add a purée, extract, etc. to get the flavor you want. (Be warned, cornstarch and acidic stuff like lemons don’t mix, so you’d be better off with tapioca starch.) Texture is definitely different than an egg set custard (a little more like gelatin), but not in an unappetizing way, just different. (P.S.: I have no doubt these bars are amazing.)
