- 1 1/2 cups half and half
- 2 Tbsp. pure vanilla extract (preferably homemade, see link)

- 2 1/2 cups sugar
- 10 large egg whites
- 4 cups unsalted butter (8 sticks or 2 pounds, cut into pieces)
- 2 tsp. pure vanilla (extractFOR THE PASTRY CREAM)
- 1 1/2 cups heavy cream
- 1/2 cup sugar
- 2 large eggs
- 1 yolk
- 2 Tbsp. flour
- 2 tsp. vanilla extract
