- 225 grams rice (sona masuri, or 1 heaped cup of rice)
- 1/4 tsp. salt
- 2 cups water
- 1/2 Tbsp. tamarind (tightly packed)
- 1/4 cup hot water
- 2 Tbsp. peanut oil (can also use sesame oil or sunflower oil)
- 1/2 tsp. mustard seeds
- 1/2 tsp. urad dal
- 2 Tbsp. roasted peanuts (or cashews)
- 1 sprig curry leaf (or 10 to 12 curry leaves)
- 1/8 tsp. asafoetida ((hing))
- 2 dried red chilies
- 200 grams brinjal (green or purple, small to medium sized (baingan or vangi or egg plant) - cut in long pieces and soaked in salted water for 15 to 20 minutes)
- 1/4 tsp. powdered turmeric
- 2 1/2 Tbsp. masala (powder, vangi bath)
- salt (as per taste)
- 2 Tbsp. grated coconut (fresh, optional)
- 1/2 tsp. jaggery (powder)
- 3 Tbsp. chopped coriander (leaves - optional)
