Just doing this as the directions say make it a bit bland. Next time I’m going to slice the zucchini and potato and then mix them with salt pepper garlic and olive oil, AND THEN line them up next to each other with the tomatoes. I think that would make it more flavorful. Adding the salt pepper and garlic at the end didn’t really add much taste, but it’s a pretty dish for sure
