- 1 sweet potato (peeled and cut into chunks, then steamed or roasted, though please check tips at the end for an alternative preparation)
- 200 grams corn kernels (fresh, or well drained, OR 150g, 1 cup frozen kernels, thawed)
- 250 grams chickpeas (cooked or tinned, rinsed and drained well)
- 2 Tbsp. olive oil
- 1 white onion (peeled and finely diced)
- 1 clove garlic (peeled and crushed)
- 3 Tbsp. millet flakes (please check tips at the end for alternatives)
- 3 Tbsp. parsley (washed and finely chopped)
- 1/2 tsp. ground cumin
- 1/2 tsp. paprika
- 1/4 tsp. ground turmeric
- 1 tsp. salt (or to taste)
- 1/2 tsp. ground black pepper
- 2 Tbsp. ground flaxseeds (I use this one + 6tbs water)
- 1 avocado (large)
- 2 Tbsp. extra-virgin olive oil
- 1 garlic (crushed)
- 1/2 lemon
- 1/2 tsp. Dijon mustard
- 1/4 tsp. salt
- 1/4 tsp. paprika
- 5 burger buns (glutenfree)
- 1 handful leafy greens (like chard, kale or ice berg salad OR fresh herbs like parsley)
- 2 tomatoes (sliced)
- 1 red onion (sliced)
- 1/2 cucumber (sliced)
