- 1/2 Tbsp. black mustard seeds
- 1 cup finely chopped onion
- 3 jalapeno chiles (seeded and minced, or or 3 ½ Tablespoons minced pickled jalapenos,seeded)
- 1 cup farina (quick- cooking, Pillsbury is fine; not Indian sooji which is too fine)
- 28 oz. plum tomatoes (can Pastene, lifted out of their juices and chopped)
- 2 cups tomatoes (finely chopped ripe garden, or grape tomatoes)
- ginger (minced peeled)
- 1/2 cup carrot (minced unpeeled)
- 1/2 cup scallion (minced, including green and white)
- 2 cups water (2 ½ cups if using fresh tomatoes)
- 1 Tbsp. kosher salt
- 1/4 cup lemon juice
- 1/2 cup cilantro (+minced)
