- 1 sausage (robe of, or Polish sausage, cut into 1/4-inch slices, nice and thin is the way to go!)
- 1/2 cup chopped onion
- 1 Tbsp. olive oil
- 2 Tbsp. brown sugar
- 2 Tbsp. apple cider vinegar
- 1 Tbsp. Dijon mustard
- 1/4 tsp. pepper
- 4 cups baby spinach (fresh)
- 5 bacon strips (cooked and crumbled, you can use the pre-cooked, or use breakfast leftovers, which we did!)
