- 9 lb. meat (remember this will give you a lot of sauce!)
- 6 lb. ground beef chuck
- 3 lb. ground pork
- 6 lb. beef
- 1/2 lb. veal
- 1/2 lb. prosciutto
- 10 large carrots (peeled and finely diced)
- 1/2 celery (a head of, washed and finely diced)
- 2 onions (large, peeled and finely diced)
- 8 cloves garlic (finely sliced or minced in a garlic press)
- 1 glug olive oil (~2tbsp)
- 1 knob butter (~2 tbsp)
- 6 oz. tomato paste (cans of)
- 2 cups milk (while)
- 28 oz. diced tomatoes (Muir Glen are the best in my opinion)
- 28 oz. fire-roasted diced tomatoes (also Muir Glen if you can find them)
- 1 btl. red wine (doesn’t have to be a stellar vintage but should be drinkable)
- 2 Tbsp. soy sauce
- 2 Tbsp. worcestershire sauce
- 1 handful dried mushrooms (– porcini or chanterelle or European mix)
- 4 Parmesan cheese (rinds)
- 8 oz. grated Parmesan cheese (finely, ideally imported Parmigiano Regiano plus more to serve)
