- 2 portobello (/flat cap mushrooms, finely diced)
- 400 grams black beluga lentils (drained, you could also use cooked brown, green, or Puy lentils)
- 1 white pepper (level teaspoon)
- 1 ground nutmeg (level teaspoon)
- 250 grams pinhead oats (it's important to use pinhead or 'steel-cut' oats, see notes below for gluten-free option)
- 1 1/2 Tbsp. marmite (or other yeast extract if GF)
- 400 mL stock (plus more water if needed)
- 30 grams sunflower seeds (chopped)

Pretty good. Would have liked more exact measurements for the onion, carrot and mushrooms. Not sure if I got the ratios right.
