- 8 oz. macaroni (dried, cellentani, elbow, spiral, etc. I used Cellentani by Barilla)
- 4 Tbsp. unsalted butter
- 1/2 cup fresh bread crumbs
- 1/4 cup all purpose flour
- 3 cups milk
- 1/2 tsp. salt
- 1/4 tsp. freshly ground pepper
- 1/8 tsp. cayenne pepper
- 2 1/2 cups sharp white cheddar cheese (coarsely grated)
- 1 cup Gruyere cheese (coarsely grated Swiss-style)
- 1/4 cup jack cheese (finely grated dry, can use Monterey Jack if you can't find the dry Jack)
