- 1/4 cup bbq sauce (good, we liked this one from Williams Sonoma)
- 1 head lettuce (crisp, torn or cut into bite-sized pieces, I like butter lettuce and/or romaine hearts)
- 1/2 pt. cherry tomatoes (or mini heirloom tomatoes, halved)
- 1 ear sweet corn (fresh, blanched and cut from cob)
- 2 Persian cucumber (small, sliced in half-moons)
- 3 beets (medium, peeled and cut into about ½" dice)
- 1/2 cup olive oil
- 1/4 cup apple cider vinegar
- 1 tsp. dried thyme (crushed)
- 1/2 tsp. garlic powder
- 1/2 tsp. salt
- 1/2 tsp. paprika
- 1/2 loaf rye bread (stale, cut into ½" cubes)

- 1/4 cup extra-virgin olive oil
- 2 Tbsp. apple cider vinegar
- 2 Tbsp. water
- 2 Tbsp. raspberry preserves
