- 2 Tbsp. olive oil
- 1 sweet onion (finely chopped)
- 1 red bell pepper (seeded and finely chopped)
- salt
- pepper
- 5 cloves garlic (minced)
- 2 Tbsp. chili powder
- 1 Tbsp. ground cumin
- 1 1/2 lb. ground beef (I used 85/15)
- 28 oz. tomato sauce
- 14.5 oz. diced tomato (lightly drained)
- 2 1/2 cups colby jack cheese (shredded)
- 1 cup sour cream (optional – see notes.)
