- 28 oz. lentils (drained and rinsed*)
- 1 cup walnuts (finely chopped)
- 2 tsp. extra virgin olive oil (10 ml)
- 2 cups sweet onion (finely chopped)
- 3 garlic cloves (minced)
- 1 cup chopped celery (finely)
- 1 cup grated carrot
- 1/3 cup apple (peeled and grated sweet)
- 1/3 cup dried cranberries (chopped or raisins)
- 2 tsp. fresh thyme (or 1 teaspoon dried thyme)
- 1 tsp. dried oregano
- fine sea salt (to taste, I use about 1 teaspoon)
- freshly ground black pepper (to taste)
- 3 Tbsp. ground flax
- 1/2 cup oat flour
- 1/2 cup bread crumbs (spelt, or bread crumbs of choice)
- 1/4 tsp. red pepper flakes (optional)
- 1/4 cup ketchup (60 ml)
- 2 Tbsp. unsweetened applesauce (30 ml or apple butter)
- 2 Tbsp. balsamic vinegar (30 ml)
- 1 Tbsp. pure maple syrup (15 ml)

i made extra glaze because obviously. and followed the recipe exactly. came out perfect & delicious

It turned out exceptionally well. I was so concerned what to feed my Niece who was visiting from out of town and not a Vegan. It was a big hit and she even took it as a sandwich to eat on the plane on the return home. Unfortunately, this recipe is a lot of work, and since I cook only for One, the meals are mostly simple and quick . I will keep this recipe for special occasions. Too bad, because it's really delicious.

Best vegetarian meatloaf I've tried- moist, flavorful, absolutely yummy. Slightly time consuming but worth it. I add ground sage to the lentils when they are cooking, adds a little extra something.
