- 2 Orange (or yellow bell peppers, finely chopped, about 2 1/2 cups)
- 2 jalapeños (finely chopped)
- 3 cloves garlic (minced, about 1 tablespoon)
- 2 Tbsp. all purpose flour
- 14 oz. diced tomatoes (drained, juice reserved)
- 3/4 cup light sour cream
- 1 cup cilantro leaves (fresh, chopped, divided)

I changed a couple of things- no diced green chili’s.. instead, I added diced jalapeños in with the bell pepper/onion
