- 3 cups water
- 1 1/2 cups chopped fresh cilantro (coarsely)
- 1.5 oz. dried shiitake mushrooms (rinsed)
- 3/4 cup peeled fresh ginger (thinly sliced)
- 2 lemongrass stalks (outer dark layers removed, all but bottom 4 inches cut off and discarded)
- 2 strips dried kombu
- 2 tsp. tamari soy sauce
- 1 tsp. unseasoned rice vinegar
- 2 cups yams (cubes peeled, red-skinned sweet potatoes)
- 5 oz. snow peas (trimmed)
- 4 cups napa cabbage (wide crosswise slices cored)
- 5 oz. carrots (slender, preferably assorted colors, peeled, thinly sliced on diagonal)
- 10 oz. udon noodles (Japanese-style, or soba noodles)
- 1 cup sliced green onions
- 1/4 cup peeled fresh ginger (matchstick-size strips)
- 6 oz. semi firm tofu (cut into 1/2-inch cubes, optional)
