It was very colorful and I like the vegetables are not over cooked in this recipe they are allowed to keep their original taste. I used smart miso which uses a lot less salt than regular miso.

It is simple and hearty. If you want less salt. It will be a good idea to use no or low sodium chiken borth or choose miso that have less sodium.

It turned out alright, the portion for udon written seems a bit too much though
