- 1 cup snow peas (rough cut)
- 1 carrot (peeled and shredded with a julienne peeler or grated)
- 2 Tbsp. cilantro (minced)
- 1/2 cup bean sprouts
- 1/4 cup peanuts (I like them salted, but you choose)
- 2 tsp. salt (plus more for sprinkling)
- 1 boneless skinless chicken breast (cut into very thin slices)
- freshly ground black pepper
- 3 Tbsp. chunky peanut butter (or smooth, I use Jiff)
- 1 Tbsp. soy sauce
- 2 Tbsp. rice vinegar (or 2 tbsp/30 ml cider vinegar)
- 2 Tbsp. brown sugar (packed)
- 1 tsp. dark sesame oil
- 1 tsp. chile garlic sauce (or red chile flake)
- 6 oz. dried udon noodles (or linguine)

Very good. I liked the alternate perpetuation method of cooking the chicken and veges with the pasta.
