- 3 Tbsp. Tahini (or Chinese sesame paste)
- 3 tsp. dark sesame oil
- 3 Tbsp. white miso
- 3 Tbsp. rice vinegar (I subbed white vinegar)
- sambal oelek (or chili garlic sauce to taste, 1/2 – 4 t)
- 4 tsp. light brown sugar (to taste, start with lesser and taste at end)
- 1 Tbsp. vegetable oil
- 4 garlic cloves (minced)
- 1 Tbsp. minced ginger
- 2 shallots (large, thinly sliced)
- 8 oz. ground pork
- 1 head napa cabbage (thinly shredded, I used more than called for, hence the range, to increase proportion of veggies)
- 2 cups chicken stock (preferably un-salted homemade)
- 2 Tbsp. light soy sauce (Chinese)
- 12 oz. dried udon noodles (or 1 lb fresh, cooked according to package directions)
- 1/3 cup salted peanuts (roasted, UN-, chopped, I used salted, but next time would seek out un-salted)
- 1 cup chopped cilantro
- 2 scallions (thinly sliced, I did not have)
