- 2 qt. beef broth (low-sodium)
- 1 carrot (peeled and cut into julienne)
- 4 fresh shiitake mushrooms (brushed clean, stems removed and caps thinly sliced)
- 1.5 oz. enoki mushrooms (trimmed and rinsed)
- 1 Tbsp. fresh ginger (peeled and grated)
- 2 red chilies (fresh)
- 1/4 cup mirin
- 1 Tbsp. soy sauce
- 1 tsp. sugar (or to taste)
- 1 bunch watercress, stems removed
- 1 bunch green onions (including 2 inches of green tops, thinly sliced)
- 1/4 cup sesame seeds (lightly toasted)

The directions list a completely different recipe. Chicken broth instead of beef. The addition of cinnamon, anise, and eggs. Jalapeno instead of red chilis. No carrots, no enoki mushrooms, no mirin, no soy sauce, no sugar, and no watercress. Sesame oil instead of sesame seeds.
