- 2 fresh udon noodles (nests)
- 2 spring onions (thinly sliced)

- 2 onions (finely diced)
- 5 garlic cloves
- 2 carrots (finely diced)
- 1 celery stick (finely diced)
- 2 Tbsp. plain flour
- 1 1/2 Tbsp. curry powder (use your favourite: mild, medium or hot)
- 600 mL vegetable stock
- 1/2 Tbsp. honey
- 1 1/2 Tbsp. soy sauce
- 1 bay leaf
- 1 tsp. Garam Masala
