Ingredients

2 SERVINGS
- 7 oz. udon noodles (packages of fresh or frozen)
- 4 baby bok choy (rinsed well)
- 1 pkg. enoki mushrooms (broken into clusters)
- 1 green onion (sliced)
- 8 tofu puffs (cut in half, found in Asian markets refrigerated aisle You can also sub any kind of Tofu or other plant protein)
- 2 Tbsp. oil (Toasted Seame)
- black sesame seeds (for garnish, optional)
- 4 cups hot water
- 1 1/2 Tbsp. miso paste (I use Cold Mountain Miso)
- 1 Tbsp. toasted sesame oil
- 2 tsp. seasoning (Umami, or Mushroom Powder, Trader Joe’s makes one)
- 3 seaweed (” piece of Kombu)
- 1 tsp. mirin (or Sake)
- 1 tsp. rice vinegar
- 2 tsp. black vinegar (found at Asian market You can just add more Rice Vinegar)
- 1/2 tsp. chili oil (Garlic)
- 1 Tbsp. grated ginger
- 2 tsp. Shaoxing wine (or Chinese Cooking Wine, found at Asian market)
