- 1 lb. fingerling potatoes (scrubbed and patted dry)

- 1 leek (large, white and light green parts only, sliced into rings)
- 1/2 cup white wine
- 1 onion (small, diced)
- 2 Tbsp. flour (finely milled, such as Wondra)
- 3 strips bacon (uncooked, or vegetarian substitute, cut into small pieces)
- 3 cups vegetable stock
- 1 cup half and half (I used reduced fat)
- 1 sherry (splash)
- 1 fish sauce (splash, optional)
- 1/2 cup Gruyere cheese (grated)
- salt
- pepper
- 1 Tbsp. flat-leaf parsley (or cilantro, chopped, optional, for garnish)
