- 1 brown onion (large, sliced, 150-180 grams)

- 1 tsp. ginger (finely chopped, approx 1cm piece ginger)
- 1 Tbsp. mild curry powder (we used keens)
- 1 tsp. cumin (ground)
- 1 tsp. coriander seeds (ground)
- 1/2 tsp. fenugreek seeds (soaked in 2 tablespoons of boiling water for 5 hours)
- 850 grams diced tomatoes
- 1 cup water
- 500 grams roast (leftover lamb, chopped coarsely)
- 1/2 cup frozen peas
- 2 cups veggies (leftover roasted, chopped coarsely)
- 1/2 cup fresh coriander (chopped coarsely)
- 1/2 cup fresh mint (chopped coarsely)
- 1/2 cup plain yogurt
